00:01:04.760 me a brief background about what it is you do? Sure. I own four assisted living homes in the

00:01:12.180 Phoenix area. Um, most assisted living are big, large facilities, uh, maybe a hundred beds or so

00:01:20.440 minor residential homes fit about, we're licensed for 10 residents in each home. We have a caregiving

00:01:27.260 staff that takes care of them 24 hours a day, seven days a week, 365. Um, and, um, we try to

00:01:35.980 make them as healthy as we can. Okay. So, so let's get into this. I reached out to have you on

00:01:41.820 because I heard that you monitor the diet of people who are in your homes. And I haven't

00:01:48.940 heard of any other assisted living places that do that, which is crazy. Um, this last summer,

00:01:55.360 I had two grandparents pass away and one of them, very old guy, he was like 93. So he had,

00:02:03.620 he had a great life, but he was put into assisted living at the end and he can't tolerate gluten at

00:02:09.280 all as many people can't. And my mom was just driven crazy because they kept feeding him gluten.

00:02:15.880 He kept falling asleep. She was like, can you just stop? And there was like, there were no

00:02:20.820 healthy options. And that was just what it looked like. And there were no options. So what, what it

00:02:26.660 is, what is it that you do with, um, your elderly people? It's elderly people, right? For assisted 0.96

00:02:32.360 living. It's primarily elderly people. We do get younger people come in that have some kind of 0.99

00:02:38.660 chronic health condition um that that may be you know hopefully we can get them better but they may

00:02:46.740 be spending the rest of their lives in assisted living the youngest i've had um i think was 38 1.00

00:02:52.380 oh man yeah and uh so uh i had a 40 year old lady that um we she came to us very overweight she'd 1.00

00:03:02.140 spent nine years in a skilled nursing facility so she was she entered that facility when she was 31 1.00

00:03:07.980 um we we got her down 230 pounds in nine months on the carnivore diet 0.57

00:03:14.620 and moved her to assist to independent living so um yeah so you know we can't we would focus

00:03:23.560 on the elderly people but we can help the younger ones as well with the chronic diseases so i really

00:03:29.860 focus on uh low carb meals as much as i can um i have a varying degree of acceptance of that with

00:03:37.360 the families. I'm hoping that someday I can just divert families to a place that's not into what

00:03:44.940 I'm doing if they don't want that. But I still want to help as many as I can. Some families just

00:03:50.640 have trouble with their mom just eating meat. So we have ketogenic meals. And then if the family

00:03:57.720 wants to bring in extra food or something, they want something different than that. I just tell

00:04:02.840 them bring it to them in their room yeah away from everyone else and and leave with any leftovers

00:04:08.320 because i don't want everyone else to go well how come they get the ice cream we don't that kind of

00:04:12.900 thing yeah but most of the families are very on board once they see what we're doing they're really

00:04:18.400 on board and when the department of health comes in and inspects us they're like wow you've got

00:04:23.820 like the healthiest assisted living residents we've seen and we're not doing anything that

00:04:36.340 many of your residents or what percentage are actually on a carnivore diet i would say we have

00:04:42.140 probably 25 to 30 percent that's crazy okay and then a good percentage of those are on a ketogenic 0.95

00:05:16.360 food meals and um and yet they're getting a very low-carb nutritious meal out of it so we've been

00:05:23.020 our cooks have been embracing her recipes along with sort of other research they've done so even

00:05:30.060 the ones that are kind of hesitant about it we just show them they're having a normal meal and

00:05:42.640 of differences do you see in residence do you see differences when they come in and then when

00:05:48.800 they've stayed there for a while time, uh, for a while. And then have you had people leave and go

00:05:53.240 back home? So in, in about nine years of doing this, I've probably had seven people move back

00:06:00.060 home. That's crazy. Yeah. So are these elderly people? Elderly people move back home. Yeah.

00:06:31.360 others the ones that really want to move back home are like every day i'm getting closer you know

00:06:36.960 they really want to move back home so they work really hard at it but even if i can get them

00:06:55.200 visit friends we had a guy uh go on a cruise with his family and we sent a caregiver we let him

00:07:02.720 borrow a caregiver they paid for her cruise and she kind of watched over him while he was on the

00:07:07.720 Cruz he was 98 years old and came back passed away six months later but biggest smile on his face for

00:07:15.560 those six months because he had a wonderful time with his family so even if I can't get you home

00:07:21.340 I can get you you know to enjoy life a little and it's not every day wake up get in the recliner

00:07:28.380 watch tv eat go back to bed kind of thing and and that's my goal I mean I'd love to send everyone

00:07:34.980 home but i get people come in it in pretty rough shape a lot of the times they don't move into

00:08:20.460 long-term living and in these areas where people are stuck is so bad it's shocking that that's

00:08:27.320 allowed so i guess my first question would be have you had any like how did you get away with

00:08:33.660 this kind of, not that it's not the right thing to do, but why are you allowed to do it? Is there

00:08:37.360 any pushback? Um, I can't speak to hospitals. I don't run a hospital, but in assisted living,

00:08:44.980 uh, the Arizona department of health services regulates us. Uh, and that's what my license

00:08:51.260 is with. They come in and inspect us and they have a whole bunch of rules and guidelines and

00:08:57.080 And they have, you know, the guidelines more are the food pyramid, the ones that we all

00:09:03.740 make fun of and everything.

00:09:06.100 And the mandatory thing is they want a menu posted of the next week's meals.

00:09:12.720 They don't seem to really clamp down on what's posted on that menu, but they want you to

00:09:18.820 be able to tell the residents and their family what you're going to be serving over the next

00:09:23.840 So I just, you know, they're very picky about coming in and, okay, you're taking trazodone

00:09:30.180 and it's 50 milligrams twice a day.

00:09:36.860 should be with prescription drugs, but they really don't, you know, they're looking in

00:09:41.180 the fridge to make sure there's not spoiled food or out of date food or things like that.

00:09:47.900 So that's what got me thinking is, well, I, no one seems to care what I serve them.

00:11:46.840 people's memory improve. I've got a guy in my house who came to us on hospice with a couple

00:11:52.300 months to live. He's completely off hospice. He was barely able to stand up. He's walking around

00:12:04.180 wife now and things like that so yes we are seeing memory improvements we're seeing improved

00:12:53.680 Yes. But of what I've seen, Alzheimer's is the next worst one. And Parkinson's isn't so hot

00:13:01.580 either. But yes, Parkinson's, there seems to be some interesting stuff too. So we don't just do

00:13:07.660 the food with Alzheimer's too. We have a outside company consultant group called a Mind for All

00:13:14.220 Seasons that they come in if people want to put their mom or dad on the program and do a whole

00:13:21.000 bunch of blood work so we could Alzheimer's there's a lot of contributing factors to getting

00:17:55.300 bunch of college kids and they're like they don't have keg parties in assisted living so i uh i

00:18:01.480 looked into it we'd i went i actually went to flight school at the old mesa gateway airport

00:18:07.120 it used to be called Williams Air Force Base. And so we'd always wanted to move back to Arizona,

00:18:13.600 my kids wanted to go to ASU and everything like that. So I took a class in assisted living down

00:18:18.420 here, liked what I saw. The guy who taught the class at a realtor, he's like, I got a bunch of

00:18:24.340 homes for sale, if you're interested. And I'm like, yeah, I'm interested. So we'll talk to my

00:18:29.420 wife, we took the leap of faith and moved down here and been doing assisted living for about

00:18:34.920 nine years now. And then how did you get into assisted living and then decide to implement

00:18:41.440 like strategies for health? Cause that doesn't, that doesn't happen. It's more like normal

00:18:47.780 assisted living is like maintenance, trying to remove pain and death. It's not, let's get you

00:18:54.340 better in here. Right? Absolutely. So, um, when I got into assisted living, I,

00:19:02.080 I looked around and was just like wait a minute we just let them sit here till they die and

00:19:09.560 everyone's like well no that we you know change their diapers and we you know give them activities

00:19:17.200 bingo and stuff and we you know give them showers but the medical people come in and take care of

00:19:24.360 their health we don't really do that stuff or we feed them that kind of thing and I'm like

00:19:29.300 but the medical people aren't I mean yes they're not dying right away they're not getting any

00:19:35.940 better they're like well they're old so they don't get better and I'm like well that's bs yeah so I

00:19:43.840 just started googling stuff I mean I'd always been a workout kind of guy I'd like to I wasn't a huge

00:19:50.460 diet guy I just thought I could out work out a bad diet you know like everyone thinks so I just

00:19:56.980 started going, I had one guy who was another pilot. It was really one of the great things

00:20:02.060 about assisted living is you meet these people who were part of history. This guy was a pilot

00:20:07.120 in the Berlin airlift. Wow. And he came in and he gave me the, I don't want to be here. I want to

00:20:12.620 go home. And I'm like, well, how badly? And he's like, really badly. I want to be with my wife.

00:20:17.860 And so, um, I said, okay, well, we're going to just take away the sugar. We're going to,

00:20:23.640 you're not going to eat dessert okay we're going to have salads and lean meat and you know what i

00:20:29.200 just my mom told me was good for you and i hired a trainer to work with him and in about four or

00:20:37.360 five months i said you the deal is if you can get out of that wheelchair and walk and get in your

00:20:42.360 wife's car you can leave and in four months he got out and walked down the sidewalk got in his

00:20:49.980 wife car and they left. And I was like, we should do that for other people. Um, so I just, I just

00:20:58.500 started Googling and searched on the internet and, and, and I went through, uh, the trainer was a

00:21:05.380 big, was a vegetarian. So he's like, Oh, you got to do the vegan thing. That'll get them all healthy

00:21:10.620 and everything. So we tried that next. I hired some vegan nutritionists and they gave me lists

00:21:18.120 of ingredients that i had to like run all over town trying to find these weird spices and vegetables

00:21:23.440 and things like that and i'm like i don't have time for this i'm running four homes i gotta fill

00:21:27.820 them i gotta you know deal with inspections all this kind of stuff so um and then maybe a month

00:21:35.480 into the vegan or two months into the vegan thing all the residents were rebelling they're like i'm

00:21:40.680 not eating a salad for breakfast i want eggs i want you know bacon i want cereal so i just and

00:21:49.200 i wasn't seeing any real improvements either they weren't eating and losing weight or they were

00:21:54.880 the eating wasn't doing much for them so i fired the nutritionist and um said that's not working

00:22:02.220 so we went back to just like let's eat good stuff you know not sugary stuff and people were still

00:22:09.500 improving a little on that but then i i uh i got this thing called i i heard on a podcast a guy

00:22:16.920 named uh john jackish i don't know if you've heard of him yes yes okay yeah he developed this

00:22:22.720 exercise equipment called an x3 and uh so it's like okay he wrote a book called weight lifting

00:22:30.300 is a waste of time and so is cardio and i thought okay i gotta read this book so i i don't like

00:22:35.620 lifting weights my whole life and i'm like am i wasting all my time so i bought his equipment

00:22:40.520 which is this band thing but in a book it says you've got to do a carnivore diet for the best

00:22:45.880 gains and so i just tried the carnivore diet from that and was like holy cow i feel amazing

00:22:54.860 and i was gaining weight on it a lot of people that do carnivore for weight loss

00:22:59.080 um and i'm like wow this is this is really cool so i just i went to my home and said

00:23:05.600 we got to do the carnivore diet and all the characters are like we can't no we can't there's

00:23:12.400 no way they're gonna do that so i backed off and said okay well it seems like there's this thing

00:23:18.940 called a ketogenic diet too so let's start with that we'll move to carnivore if we have to or

00:23:24.780 something if we can and so we just started you know reading the carb labels and things like that

00:23:33.200 and tried to you know give them low carb vegetables give them a lot of meat a lot of fish things like

00:23:39.760 that and we were seeing lots of improvement um and and then i went to um the uh i have two homes

00:23:50.800 except medicaid patients and medicaid as you probably know doesn't pay much so i'm like i went

00:23:57.360 to one of the the insurance companies that administers medicaid and i said what what's your

00:24:03.120 troublesome population how can i help you and raise my rates so i can like you know make some

00:24:11.840 money on these medicaid homes and they said well um our obese individuals no one wants them

00:24:20.640 we have this hospital that has all the obese people and i met a girl i went to the hospital

00:24:27.120 and toured it i met a girl who was a thousand pounds oh my gosh i i couldn't believe that

00:24:33.360 these people and they this was their life they're going to be in this hospital the rest of their

00:24:37.520 lives so i'm like fine i'll try it so i i hired a guy um from las vegas who i met through that

00:24:46.400 John Jakish. His name's Daniel Magyar. And he, um, he has an amazing site. It's dmprotrainer.com

00:24:55.480 and he helps people virtually. And I said, okay, I, I can, um, Medicaid's going to pay me to pay you

00:25:03.700 to help virtually this lady. And so we had her on weekly conference calls with this guy. He's a huge

00:25:09.700 like bodybuilder. It's the carnivore diet, believes in X3, all that kind of stuff. And we

00:25:15.180 bought her an x3 and for nine months she came to our home and she was just losing losing losing 0.82

00:25:21.760 so she got down 230 pounds in nine months you know she's when i come over there she's like

00:25:27.440 how you can see my collarbone oh my gosh just hearing that kind of stuff you're like

00:25:32.080 oh i love this you know and just when i hit on something and it's working i'm like oh yes this

00:25:39.440 is it so um i hope i'm not rambling no no keep going this is awesome so so then you know i have

00:25:48.900 all these people who have dementia and i have ladies who are 95 pounds as you probably yeah

00:25:53.100 they don't need to lose weight so uh while i'm doing that i'm looking up uh something i i found

00:26:01.960 this guy, Dr. Dale Bredesen, who, um, had spent 30 years researching Alzheimer's. He's a neuro,

00:26:10.400 um, what's the neurologist and, um, actually was reversing Alzheimer's in certain people.

00:26:19.100 And he was using a functional medicine approach. He was the one who came up with there's 35 or 40

00:26:23.940 causes of Alzheimer's. And so I went to his website. It took me two or three years of trying

00:26:33.960 to convince people, let's try this. And finally, a lady said, I want to do it for my mom. So we

00:26:38.820 signed her up. We got all the blood tests. They came back with a report and everything. And they

00:26:44.260 said, you got to hire someone as a health coach to sort of help you through that's certified in

00:26:49.200 the Bredesen protocol. And that's where I hired a mind for all seasons. Um, and so we've been doing

00:26:55.940 sort of his protocol ever since the only difference is he's a very much more plant-based

00:27:02.460 guy. And he, he, he likes to say, he didn't say meat as a condiment, but I, I keep thinking,

00:27:09.500 you know, he wants to, he wants you to eat a bounty of vegetables. And I'm kind of,

00:27:14.280 i see so many more results on the carnivore diet that i i kind of shy away from that everything

00:27:21.160 else in this protocol i totally believe in that's where we got the red light therapy the sauna

00:27:25.420 we've taken people for hyperbaric oxygen treatment all those kind of things help with the dementia

00:27:32.060 as well as exercise so i've hired personal trainers that come in and exercise our in

00:27:37.080 our residents multiple times a week to and we try to take them out on walks we get them sunshine
