In this final episode of the Festival of Bites, I make the traditional foods of Hanukkah, latkes and donuts. Latkes are like potato fritters, and they are fried. And donuts are donuts, which are also fried. These are typical foods that we eat on Hanukah because we like to eat fried foods on to celebrate the miracle of the oil.

00:02:11.040 So I started off by making the donuts and this is what you'll need.
00:02:14.560 Two envelopes active dry yeast.
00:02:17.700 A quarter cup warm water.
00:02:20.120 One and a half cups lukewarm milk.
00:02:22.680 A half cup white sugar.
00:02:25.080 One teaspoon salt.
00:02:27.200 Two eggs.
00:02:28.420 A third cup shortening.
00:02:30.560 Five cups all-purpose flour.
00:02:33.500 One quart vegetable oil for frying.
00:02:36.400 Two cups confectionery sugar.
00:02:38.740 One and a half teaspoons of vanilla.
00:02:41.040 And a third cup of milk.
00:02:43.540 Now I'm using a recipe from All Recipes.

00:03:14.240 So the first thing that I did for the donuts is I sprinkled the yeast over the warm water and I let it stand for five minutes.
00:03:21.100 And then I mixed that together with the milk, sugar, salt, eggs, shortening, and two cups of the flour.
00:03:26.220 So I did that by hand.
00:03:36.680 And then I beat in the remaining flour.
00:03:39.640 But I was using a mixer and the mixer was not having it.
00:03:43.540 It was just too thick, too hard.
00:03:45.180 So I ended up going back to the spatula and then kneading it with my hands.
00:03:49.660 Then I greased the bowl and covered it and set it in a warm place to rise.
00:04:12.840 After I waited a bit, I turned the dough out and I cut it into donut shapes.
00:04:22.840 And that's kind of my favorite part is you roll it into a half-inch thickness and then you just cut it into donut shapes.
00:04:28.900 Now, there are specific tools you can buy that can cut it out for you in that shape.

00:05:32.380 While that was rising, I set to work on the latkes.
00:05:35.360 So I chose to double the recipe for the latkes because I wanted to make sure there was enough

00:05:42.300 So what you will need if you double the recipe like I did is four large russet potatoes,
00:05:48.060 two large onions, four large eggs, one cup all-purpose flour, four teaspoons coarse kosher
00:05:57.200 salt, two teaspoons baking powder, I accidentally showed you guys baking soda here, and one
00:06:05.020 teaspoon freshly ground black pepper, as well as oil for frying.
00:06:09.860 So I peeled and cut up the potatoes and I popped those into the Cuisinart and then
00:06:15.620 I peeled and cut up the onions and popped those into the Cuisinart and then sort of roughly
00:06:21.120 chopped up everything so that there was still a little bit of texture to the latkes.
00:06:25.120 I don't like when my latkes are super smooth.
00:06:28.620 I just don't like that texture as much.
00:06:30.380 And then I poured that into a hand towel, which I then squeezed to get all of the liquid juice

00:06:37.380 And then I added in all of the other ingredients, mixed it together and set it to the side.
00:06:45.220 So unfortunately, this was where the video did not record.
00:06:49.380 I didn't record the food actually frying.
00:06:53.380 So with the doughnuts, I'll just explain pretty quickly.
00:06:55.980 The doughnuts, you slide in with a spatula into the oil, I use peanut oil, and they fry

00:07:02.580 So you don't have to sit and wait for those to fry, they just, they fry really quickly
00:07:06.640 and you want to get them to the right color that you want to see on the doughnut.
00:07:10.940 And then for the latkes, those took a little bit longer because it's a wetter mix.
00:07:15.620 So I put that into the oil and then let those fry as well.
00:07:19.880 And this was also where I had a bit of an issue where I was trying to use the glaze from
00:07:24.420 the recipe of the doughnuts.
00:07:26.500 And I was trying to make that at the same time and it was a disaster.
00:07:31.160 I tried it twice, did not work either time.
00:07:34.560 And actually I ended up leaving it on the stove when I was done with it because I wanted to
00:07:39.320 serve the food to the guests and I was going to clean that up afterward.
00:07:42.980 And it hardened so much that it was almost impossible to remove from the pot.

00:07:51.080 You can try making the glaze at home.

00:07:54.660 So what I ended up doing is I just made a super simple glaze of milk, confectionery sugar,

00:08:04.500 And it just made a beautiful glaze.

00:08:06.760 And as you can see, I just dipped the doughnuts in and then added sprinkles and everything was
