Hello Classic Crew and welcome to the last episode of the Festival of Bites
00:00:12.980
So this is the moment you've all been waiting for.
00:00:16.240
I am going to be making the traditional foods of Hanukkah.
00:00:21.860
Latkes are like potato fritters and they are fried.
00:00:30.220
These are typical foods that we eat on Hanukkah
00:00:32.860
because we like to eat fried foods on Hanukkah to celebrate the miracle of the oil.
00:00:37.760
So I've discussed this a bit in my earlier episodes.
00:00:40.180
Make sure to go back and watch the rest of the episodes of the Festival of Bites.
00:00:47.640
But the food that I prepared I actually made last night for a party that we hosted.
00:00:54.320
And so I made donuts and latkes for all the people that we had.
00:01:01.080
But it was definitely a lot to kind of handle because I was making both recipes at the same time.
00:01:06.580
I was making the latkes and the donuts all at once.
00:01:09.680
I was frying them up together and not in the same pan, but at the same time.
00:01:14.560
And it is a lot to do because donuts are kind of a complicated recipe.
00:01:24.600
And these are recipes you could definitely replicate at home.
00:01:27.600
So I'm excited to share them with you guys today.

It comes to your inbox twice a week and you get access to weekly articles as well as my
00:02:11.040
So I started off by making the donuts and this is what you'll need.
00:02:46.000
I will have it linked in the description box below.
00:02:48.460
But I didn't actually end up using their glaze.
00:02:51.680
And I will get more into that later in this episode.
00:02:55.160
So I used a few of the same ingredients that they listed.
00:03:00.560
And by the way, I wanted to mention, I've gotten a lot of comments about this apron.
00:03:04.320
I will have it linked in the description box below.
00:03:06.600
I got it from Cost Plus World Market and I absolutely love it.
00:03:10.220
So definitely, if you're interested in purchasing it, it might be a really nice gift for the holidays.
00:03:14.240
So the first thing that I did for the donuts is I sprinkled the yeast over the warm water and I let it stand for five minutes.
00:03:21.100
And then I mixed that together with the milk, sugar, salt, eggs, shortening, and two cups of the flour.
00:03:39.640
But I was using a mixer and the mixer was not having it.
00:03:45.180
So I ended up going back to the spatula and then kneading it with my hands.
00:03:49.660
Then I greased the bowl and covered it and set it in a warm place to rise.
00:04:12.840
After I waited a bit, I turned the dough out and I cut it into donut shapes.
00:04:22.840
And that's kind of my favorite part is you roll it into a half-inch thickness and then you just cut it into donut shapes.
00:04:28.900
Now, there are specific tools you can buy that can cut it out for you in that shape.
00:04:38.180
And those two things make the perfect donut shape.
00:04:40.360
So I didn't really need to worry about purchasing something special.
00:04:44.100
I used a cup and I used a cup Dukksiж lots of real.
00:04:49.180
Remember, if I had this one cup I also used to balance, you should buy the pot.
00:04:51.980
I used a cup and I used top Dukksi to put it in a jar every year.
00:04:56.240
So I used to lay it in aعة that is the 15- does take it at preachingfully now.
00:05:01.500
I used it in a month now and now I used to buy the donut.
00:05:06.500
This is actually I used a cup of Hell and I used to be imperfect as well.
00:05:10.480
Would recommend that the ai-b视 of this year?
00:05:12.840
Then I set the cut-out doughnuts over to the side to rise again.
00:05:32.380
While that was rising, I set to work on the latkes.
00:05:35.360
So I chose to double the recipe for the latkes because I wanted to make sure there was enough
00:05:42.300
So what you will need if you double the recipe like I did is four large russet potatoes,
00:05:48.060
two large onions, four large eggs, one cup all-purpose flour, four teaspoons coarse kosher
00:05:57.200
salt, two teaspoons baking powder, I accidentally showed you guys baking soda here, and one
00:06:05.020
teaspoon freshly ground black pepper, as well as oil for frying.
00:06:09.860
So I peeled and cut up the potatoes and I popped those into the Cuisinart and then
00:06:15.620
I peeled and cut up the onions and popped those into the Cuisinart and then sort of roughly
00:06:21.120
chopped up everything so that there was still a little bit of texture to the latkes.
00:06:30.380
And then I poured that into a hand towel, which I then squeezed to get all of the liquid juice
00:06:37.380
And then I added in all of the other ingredients, mixed it together and set it to the side.
00:06:45.220
So unfortunately, this was where the video did not record.
00:06:53.380
So with the doughnuts, I'll just explain pretty quickly.
00:06:55.980
The doughnuts, you slide in with a spatula into the oil, I use peanut oil, and they fry
00:07:02.580
So you don't have to sit and wait for those to fry, they just, they fry really quickly
00:07:06.640
and you want to get them to the right color that you want to see on the doughnut.
00:07:10.940
And then for the latkes, those took a little bit longer because it's a wetter mix.
00:07:15.620
So I put that into the oil and then let those fry as well.
00:07:19.880
And this was also where I had a bit of an issue where I was trying to use the glaze from
00:07:26.500
And I was trying to make that at the same time and it was a disaster.
00:07:34.560
And actually I ended up leaving it on the stove when I was done with it because I wanted to
00:07:39.320
serve the food to the guests and I was going to clean that up afterward.
00:07:42.980
And it hardened so much that it was almost impossible to remove from the pot.
00:07:48.760
So I don't know if it was something I was doing wrong.
00:07:54.660
So what I ended up doing is I just made a super simple glaze of milk, confectionery sugar,
00:08:06.760
And as you can see, I just dipped the doughnuts in and then added sprinkles and everything was
00:08:37.940
We actually have no more leftover doughnuts except the one that I'm going to taste test
00:08:41.700
in this video and zero leftover lot because those were completely finished.
00:08:47.140
So now I want to taste test the doughnuts for you guys.
00:08:56.340
And the interesting thing about these doughnuts is that they're not super sweet.
00:09:01.740
Most of the sweetness does come from the glaze, but it is delicious.
00:09:14.420
There is something very special about a homemade doughnut.
00:09:19.740
I hope you guys followed along and enjoyed all of the recipes that I made.
