00:00:10.480 So one thing you should know about me, when I cook in the kitchen, I don't really use

00:00:15.760 I kind of throw things in the pot and do things for taste more than anything else.
00:00:20.200 So if I don't really have specific measurements, that's why.
00:00:23.000 But let's get started.
00:00:24.000 The first thing I'm going to do is I'm going to cut up two onions and I'm just going to
00:00:30.360 cut dice them.
00:00:31.360 I'm not going to do anything fancy.
00:00:32.840 They're going in with our Beyond Meat.
00:00:34.880 That's what we'll be using today is a meat substitute.

00:00:55.560 So the first thing I'm going to do is I'm just going to take this, slice it in half and

00:01:09.360 One of the things that I love about this recipe is just how simple it is.

00:01:14.440 I read a few different lasagna recipes and took the best things from each one and then just

00:01:20.440 So I'm only cutting up one onion because I'm only going to be using one pound of Beyond

00:01:26.800 And I don't want there to be more onion than there is meat.
00:01:28.800 So I'm just going to put that forward here.
00:01:32.040 So while the oven is heating up, you might hear that whirring sound, that's the oven.
00:01:36.900 I have this induction cooktop in front of me.
00:01:39.680 I have this specifically for these videos so that I could make food in front of you since
00:01:44.040 my stove is over there and it's not the best for filming.
00:01:48.040 So I'm going to fill up this pot with water and we're going to boil our lasagna noodles.
00:01:54.040 Now with lasagna noodles, you don't want to overcook them because they can get mushy very,
00:01:58.040 very quickly.
00:01:59.040 You're cooking them and you put a lot of different kind of moisture in the food.
00:02:02.920 So you want to get these really al dente more than totally cooked, which means you're going
00:02:07.280 to probably want to boil them for like 10 to 12 minutes rather than 12 to 14 minutes.
00:02:12.240 Now these are from Hy-Vee and these are OU kosher.
00:02:16.320 For those of you who don't know, the kosher certification on a lot of boxes is a O with
00:02:21.840 a U inside or it's a circle with a K or a star with a K. Things like that tell us that
00:02:27.640 these are kosher.
00:02:28.640 So if you're looking for lasagna noodles and you're in the Nebraska area, then these will
00:02:34.740 do you.
00:02:35.740 So I'm just going to put in a little bit of olive oil into this water because I want to
00:02:39.240 make sure that these lasagna noodles don't stick together.
00:02:41.940 That would be a really annoying outcome, so what we do is we put in a little bit of olive
00:02:47.700 oil just to make sure that those noodles don't stick together.
00:02:51.360 So while this water is coming to a boil, I am going to put some olive oil in this pan,
00:02:58.340 just a little bit, maybe a little more than that, and then I'm going to start frying up
00:03:03.780 the onion.
00:03:04.780 Those onions are now going to be mixed in with my Beyond Meat, but first we want to fry
00:03:09.160 these up.
00:03:10.160 So we've got this coming to a boil and we've got our onions frying, they smell delicious.
00:03:15.340 What I'm going to do in the meantime is make up our cheese mixture.
00:03:18.460 So in Omaha, we have a hard time getting Parmesan cheese that's kosher, so I don't really have
00:03:24.560 any to work with.
00:03:25.560 Instead we're going to be using mozzarella and ricotta.
00:03:28.280 So the mozzarella we're just going to lay on top, but the ricotta we're going to do something
00:03:31.800 a little more special with.
00:03:33.480 So what we're going to do is I'm going to take some of this ricotta cheese, crack an egg into
00:03:38.600 it, put some oregano, salt and pepper in, and then we'll have a little bit more of a delicious
00:03:42.780 flavor from that ricotta.
00:03:43.780 Ricotta can tend to be a little bit bland, so if you put in the stuff that we want to
00:03:47.900 make delicious, it'll be even better.
00:03:49.900 So like I said, I don't really like to work with measurements, so I'm just going to spoon
00:03:54.080 some of this into this bowl right here.
00:03:58.040 So I just spooned about half, a little more than half of this ricotta package into this
00:04:03.900 glass bowl here.
00:04:04.900 And I am going to crack an egg into this mixture.
00:04:09.900 And before I mix that ricotta cheese mixture together, I'm actually going to add my meat
00:04:17.900 into this pan, if I can get it out of the package.
00:04:21.900 And again, it's fake meat.
00:04:23.900 I'll just repeat myself, just for anybody who's only just joining us.
00:04:27.900 And I'm going to mix this in with my onions.
00:04:33.900 We got something that kind of looks like this.
00:04:35.900 And I'm just breaking it up into smaller pieces so that it becomes more of a meat sauce.
00:04:42.900 So this is what the meat mixture is looking like.
00:04:44.900 And over here, we've got our water almost coming to a boil.
00:04:48.900 And over here, we've got our ricotta egg and cheese mixture.
00:04:53.900 So now that this is cooking and sizzling up and this is coming to a boil, I can continue
00:04:58.900 on with my ricotta cheese mixture.
00:05:00.900 So I am just taking my whisk and I'm feeding this egg into my ricotta cheese.
00:05:06.900 And I'm just going to do that until it's completely blended together.
00:05:10.900 And before I actually finish doing that, I am going to add a couple of seasonings.
00:05:16.900 So what I'm going to be adding to this is just a little bit of, if I can find it, I'm going
00:05:23.900 to do a little bit of oregano, a little bit of paprika, and a little bit of salt and pepper.
00:05:28.900 So the first thing we're going to do is throw in a little bit of oregano.
00:05:31.900 Now what I usually do is until I see kind of the top is covered, I feel like that's a good place to stop.
00:05:38.900 And now I'm just going to put in a little bit of paprika and just a little bit of pepper and a little bit of salt.
00:05:54.900 And now we mix it together.
00:05:56.900 And as you're mixing it, you'll kind of see the color of all of your spices in your mixture.
00:06:02.900 And you can kind of tell, at least for me, whether or not you feel like there's enough of the oregano, of the paprika.
00:06:09.900 I mean, it's easy for me to look and see, okay, I don't think there might be enough oregano
00:06:13.900 because I'm not seeing it as often as I'm putting this mixture together as I would like.
00:06:19.900 Our Beyond meat is cooking up nicely.
00:06:22.900 It smells really, really good.
00:06:25.900 Okay guys, so the noodles are done.
00:06:28.900 We're going to turn this off here.
00:06:30.900 And I'm going to lift the lid.
00:06:33.900 Oh, that's steam!
00:06:36.900 I've grabbed some more tools from the other side of the kitchen.
00:06:39.900 This is going to be the can that we're going to make our lasagna in.
00:06:43.900 I'm going to use this cookie sheet with a paper towel over it to take these noodles and lay them flat.
00:06:50.900 I don't, like I said before, I don't want them sticking to each other.
00:06:53.900 You can already see these two are sticking to each other.
00:06:56.900 And for the meat here, what I'm going to do is I'm going to pour in some marinara sauce.
00:07:01.900 And I'm just going to dump in a whole lot of that.
00:07:04.900 Again, no measurements.
00:07:06.900 And I'm just going to take this spoon.
00:07:09.900 We won't mix and match.
00:07:10.900 I'll wash it off in between.
00:07:12.900 But I'm going to just mix this all in with our meat mixture.
00:07:17.900 And it's going to look something like that.
00:07:19.900 So as you can see here, this is our meat mixture.
00:07:24.900 We've got marinara sauce, onions, and some of that fake meat.
00:07:29.900 And here are our cooked noodles.
00:07:32.900 And here is the ricotta cheese now that it has been mixed together.
00:07:36.900 Now I've still got my pan here.
00:07:38.900 And even though it's not on the stove, I'm going to throw in some Italian seasoning.
00:07:42.900 And a little bit of garlic powder.
00:07:45.900 Now normally I would do this on the stove, but because we're using the induction cooktop,
00:07:49.900 things are a little bit more, you know, out of the normal for me.
00:07:54.900 But this is still pretty hot, so I don't think it will make too much of a difference.
00:07:59.900 Okay guys, so I shifted our view over to the pan here.
00:08:04.900 So what we're going to do is I'm going to take enough of this meat sauce to cover the bottom of the pan.
00:08:12.900 So you don't want to take all of it because you want to have some layers.
00:08:15.900 But we're just going to take enough that we can get a good cover of the bottom of the pan.
00:08:25.900 Next thing that we're going to do is I'm going to lay out these layers of the lasagna.
00:08:33.900 And I think we're going to do four layers.
00:08:38.900 So you want to make sure that they overlap so that the whole lasagna sticks together.
00:08:44.900 And then I'm going to take this ricotta mixture and I'm just going to spread it over the top.
00:08:59.900 Now we're going to take some mozzarella cheese and sprinkle it over the top of this.
00:09:11.900 Next we're going to take another layer of the meat sauce.
00:09:17.900 Next up, another layer of noodles.
00:09:29.900 And we just repeat the process.
00:09:34.900 So I'm just going to go ahead and finish this and then we'll pop it into the oven.
00:09:41.900 And if you run out of meat sauce, just do what I'm doing.
00:10:00.900 Pour in a little bit of marinara sauce.
00:10:03.900 So I've covered up my lasagna with some Reynolds wrap.
00:10:20.900 I'm going to pop it into the oven at 375 for about 20-25 minutes.
00:10:25.900 And then we'll take off the Reynolds wrap and put it back in at 400 degrees for about 10-15, maybe 20 minutes depending on what I think it needs.
00:10:34.900 And we'll pull it out and see what it looks like.
